  1. Knead flour and water into a firm dough and rest it while you make the filling.

  2. Mix the meat with grated onion, garlic, salt, pepper and a splash of water so the filling stays moist.

  3. Roll the dough into small rounds a little thicker in the middle.

  4. Spoon filling into each round and pinch the edge into pleats, leaving a small opening at the top.

  5. Arrange in an oiled steamer without touching and steam 18–20 minutes until the meat is cooked and the wrappers are glossy.

  6. Serve hot, eaten by hand, with the juices sipped out first.

💡 Astuces

  • A little water in the filling creates the prized burst of juice.
  • Oil the steamer so the buuz release cleanly.
  • Leftovers are excellent pan-fried until the bottoms crisp.
