  1. Mix the pork with the lemongrass, shallots, garlic, marinade fish sauce, palm sugar and dark soy. Leave at least 30 minutes.

  2. Make the nước chấm: dissolve the sugar in the warm water, then add the lime juice and fish sauce. Taste — it should be drinkable, not fierce.

    💡 Water first, then sugar, then the acids. Nước chấm poured straight from the bottle is far too salty — the dilution IS the recipe.

  3. Grill the pork over charcoal or under a very hot grill, 3 minutes a side, until the edges char.

  4. Cook the noodles, rinse them under cold water and drain completely. They must be cool.

  5. Build each bowl: herbs and lettuce at the bottom, noodles, pork, pickles, peanuts and a spoon of spring onion oil.

  6. Pour the nước chấm over at the table and mix everything from the bottom.

  • The noodles are cold, the pork is hot, and that contrast is the dish. Warm noodles make it heavy.
