Whip the room-temperature egg whites to soft peaks.
Add the sugar a spoonful at a time, beating until the meringue is stiff, glossy and no longer gritty when rubbed.
Fold in the cornstarch and vinegar, which give the soft marshmallow center.
Spoon into a round on a lined tray, building up the sides slightly to hold the topping.
Bake low at 120°C (250°F) for about 90 minutes, then turn off the oven and let it cool inside completely.
Just before serving, pile on whipped cream and fresh fruit.
