Mix the oats, flour, coconut and sugar in a large bowl.
Melt the butter with the golden syrup in a small pot.
Dissolve the baking soda in a tablespoon of boiling water and stir it into the butter — it will foam up.
Pour the butter mixture into the dry ingredients and mix into a stiff dough.
Roll into balls, space them well on a lined tray, and flatten slightly.
Bake at 160°C (325°F) for 12–15 minutes until golden; they firm up as they cool.
