Japanese wagashi / 和菓子 — The word dorayaki comes from dora, a gong the round cakes resemble; folklore even tells of the warrior Benkei's forgotten gong being used as a griddle. The familiar two-pancake sandwich form was created in 1914 by the Tokyo confectioner Usagiya in Ueno.

Whisk the eggs, sugar and honey until pale and thick — this air gives the pancakes their bounce.
Sift in the flour, add the dissolved baking soda, and fold to a smooth batter; rest it 15 minutes.
💡 Resting relaxes the batter so the pancakes brown evenly and stay tender.
Heat a nonstick pan over low, wipe it almost dry of oil, and ladle small rounds of batter.
When bubbles open across the surface, flip and cook the second side briefly, keeping an even tan colour.
Cool the pancakes under a damp cloth so they stay soft and don't dry at the edges.
Mound red bean paste on one pancake, top with another, and press the edges to seal the dome.
