Layers of bread with prawn, egg and smoked salmon fillings, iced all over with cream cheese and decorated like a birthday cake — savoury, served in wedges, and completely serious.

Recipe by The Swedish smörgåsbord · 🏺 Traditional · The cold table — herring first and in silence, then the salmon, then the eggs, then everything else, with a clean plate for each round.
Swedish · party centrepiece — An ownerless traditional dish, so no cook is credited. The cited article confirms that it is a savoury main dish rather than a dessert, the layered bread construction, the seafood and egg fillings and the cake-style decoration. Quantities and method are this book's own.

Cut the loaf into four horizontal slabs 1.5 cm thick and trim off all the crust.
Make the fillings. Egg: chop 4 eggs with half the mayonnaise and dill. Prawn: chop the prawns with the rest of the mayonnaise, lemon juice and more dill.
Beat the cream cheese with the crème fraîche, lemon zest, salt and pepper until spreadable and smooth. This is the icing.
Build it: bread, egg filling, bread, prawn filling, bread, smoked salmon and cucumber, bread on top. Press down firmly.
💡 Press each layer as you go. An unpressed sandwich cake slides apart the moment a knife touches it.
Ice the top and sides completely with the cream cheese mixture, smoothing it with a palette knife.
Chill 4 hours, then decorate with prawns, salmon rosettes, cucumber slices, dill and lemon. Cut in wedges to serve.
