Mix the flour, yeast, sugar and salt, add the warm water and oil, and knead to a soft dough. Cover and leave to rise for about 1 hour until doubled.
Meanwhile, chop the onion, garlic, tomato and pepper very finely (or pulse in a processor to a rough paste) and mix with the meat, both pastes, the spices and salt.
💡 Chop the vegetables as small as you can. Big pieces steam and lift the topping off the bread instead of drying into it.
Divide the dough into 4. On a floured bench, roll each piece as thin as you can into a large round — thinner than you think it should be.
Spread a thin, even layer of the meat mixture right to the edge of each round, pressing it in. Slide onto a hot tray or stone.
Bake in the hottest oven you have (250°C or more) for about 8–12 minutes, until the edges are crisp and the meat is cooked. Roll up with parsley, sliced onion and plenty of lemon.
💡 The oven cannot be too hot here. A fierce heat sets the thin bread crisp before the topping can dry out.
