Steps

  1. For extra smoothness, simmer the chickpeas with a little baking soda until very soft, then rub off the skins.

  2. Blend the tahini, lemon juice and garlic first until pale and thick.

  3. Add the chickpeas and blend, streaming in ice water, until completely smooth and fluffy.

  4. Season with salt and cumin and adjust the lemon to taste.

  5. Spread into a bowl, making a well with the back of a spoon.

  6. Pool olive oil in the well, dust with paprika, and serve with warm flatbread.

💡 Tips

  • Blending the tahini and lemon first gives a silkier base.
  • Ice water whipped in makes it pale and airy.
  • Slipping the chickpea skins off is tedious but worth it for special occasions.
