Japanese · Zaru soba / ざるそば — Zaru soba is cold buckwheat soba served on a bamboo tray (zaru) with a dipping tsuyu. The zaru version is topped with shredded nori, distinguishing it from plain mori soba, and is a beloved summer dish.

Make the tsuyu ahead by simmering dashi, soy and mirin, then chilling it until cold.
Boil the soba in plenty of unsalted water, stirring gently, just until tender.
Drain and rinse the noodles under cold running water, rubbing off the starch until they feel cool and firm.
Shake the noodles dry and lay them on a bamboo zaru or a flat basket.
Scatter shredded nori over the top.
Serve with the cold tsuyu, scallion, wasabi and grated daikon to stir in and dip.
