Zubereitung

  1. Loosen the noodles by rinsing them briefly under warm water so they separate.

  2. Stir-fry the sliced pork in a hot oiled pan until it colours.

  3. Add the cabbage, onion and carrot and fry until just wilted but still crisp.

  4. Push in the noodles, add a splash of water, and toss to warm them through.

  5. Pour the sauce over and stir-fry hard until every strand is coated and glossy.

  6. Plate up and finish with aonori, pickled red ginger and bonito flakes.

💡 Tipps

  • High heat and quick tossing keep the noodles from turning soft and sticky.
  • Loosen the noodles before they hit the pan so the sauce coats them evenly.
  • The name means 'fried soba,' but the noodles are actually wheat, like ramen.
