Zubereitung

  1. Boil the whole yams in their skins 30–40 minutes until a knife slides in easily. Cool enough to handle, peel, and mash or grate finely.

    💡 Boil in the skin. Peeled yam takes on water and the halaya never thickens properly.

  2. Melt the butter in a wide, heavy pan. Add the mashed yam, condensed milk, coconut milk, sugar and salt and stir until smooth.

  3. Cook over medium-low heat, stirring constantly with a wooden spoon, 25–30 minutes. It goes from loose to thick to a mass that holds a trail and pulls from the pan sides.

    💡 Do not walk away. The sugar in the condensed milk catches on the bottom in the last ten minutes and one scorched patch flavours the whole batch.

  4. Stir in the vanilla. Scrape into a buttered dish or moulds, smooth the top, and cool. Chill to set.

  5. Serve cold, plain or with a little latik or grated cheese on top.

💡 Tipps

  • It keeps two weeks in the fridge and is the base of everything ube: fold into whipped cream for ube ice cream, spread between sponge layers for ube cake, spoon over shaved ice for halo-halo.
  • The colour should come from the yam alone. Halaya that is violently purple has had extract added.
