Simmer the berries with the water and vanilla pod for 10 minutes until they have completely collapsed.
Push it all through a sieve, pressing hard on the solids. Discard the pips and skins.
Return the juice to the pan with the sugar and lemon juice and bring it back to a simmer.
Slake the potato flour in 4 tbsp cold water, take the pan OFF the heat, and whisk it in.
💡 Off the heat, and do not boil it afterwards. Potato flour thickens instantly and then thins again if it boils — this is the one step that goes wrong.
Pour into a serving bowl and sprinkle the top with caster sugar while still hot.
💡 The sugar on top stops a skin forming as it cools. This is the traditional trick and it works.
Chill at least 3 hours. Serve cold in bowls with cold single cream poured over — never whipped.
