Brazilian / Portuguese convent sweet — Quindim descends from Portuguese convent egg-yolk sweets, remade in Brazil with coconut brought by the Atlantic trade. Its name is thought to come from a Kimbundu word, and it is a fixture of Brazilian bakeries and party tables.

Gently whisk the yolks with the sugar until just combined and smooth — do NOT beat air into them.
💡 Beating in air is the classic quindim mistake: bubbles bake into a foamy, pale top instead of the smooth glassy surface that makes a quindim beautiful.
Stir in the desiccated coconut, melted butter and coconut milk until you have a thick, even batter.
Let the batter rest at room temperature for 15 minutes so the coconut drinks in the liquid.
💡 Resting hydrates the coconut so it sinks and forms the signature firm base while the yolk layer sets glossy on top.
Heat the oven to 170°C. Brush small metal moulds or a muffin tin generously with butter, then dust with sugar and tap out the excess.
Divide the batter between the moulds, filling each about three-quarters full. Set the moulds in a deep roasting tray.
💡 Don't overfill — the custard rises a little as it bakes and settles back as it cools.
Pour hot water into the tray to come halfway up the sides of the moulds, making a bain-marie.
💡 The water bath is essential — it keeps the heat gentle and even, so the custard sets silky instead of scrambling into grainy sweet omelette at the edges.
Bake 40–45 minutes, until the tops are set and deep golden and a skewer comes out clean.
Lift the moulds out of the water and cool to room temperature, then chill at least 2 hours until firm.
Run a thin knife around each custard, set a plate on top and invert so it drops out coconut-base up, glossy yolk side down on the plate.
💡 If it sticks, dip the mould base in hot water for 10 seconds — chilled sugar crust loosens instantly with a little warmth.
Serve cold, on its own or with a spoon of unsweetened whipped cream.
