Bring a large pot of salted water to a boil. Blanch the kangkung 45 seconds — no longer — then lift into iced water, drain, and squeeze gently.
💡 Forty-five seconds, then cold. Kangkung goes from bright and crunchy to olive and slimy in the minute after that, and it cannot come back.
Pound or blend both chillies, shallots, garlic, candlenuts, tomato and terasi into a coarse, wet sambal. Season with lime, salt and sugar.
💡 Raw. Plecing sambal is not cooked, which is why it tastes so sharp and green next to the mellow blanched leaves.
Arrange the kangkung on a plate with the bean sprouts. Spoon the sambal over the top and scatter with fried peanuts.
Serve at room temperature or chilled, as a side to grilled chicken or fish.
