Soften the shallots and garlic in a little oil in a heavy pot, 3 minutes, without colouring them.
Add the rice, coconut milk, broth, lemongrass, salam and salt. Bring to a boil, then cover and cook on the lowest heat for 18 minutes.
💡 Coconut milk catches and burns far more easily than water. Use your heaviest pot and the smallest flame you have.
Rest the rice, still covered and off the heat, for 10 minutes, then fluff with a fork.
For the areh: beat the eggs into the coconut cream with 1/2 tsp salt, pour into a shallow dish and steam 20 minutes until just set.
💡 Steam it gently. Boiled hard, the egg curdles and the custard weeps water instead of sitting soft on the rice.
Simmer the jackfruit with the palm sugar, a salam leaf and 150 ml water for 15 minutes until it takes on colour.
Cone a banana leaf or use a bowl: rice at the bottom, then chicken, jackfruit and a spoonful of the areh on top.
