Boil the potatoes in their skins until soft, then peel them while still hot and press them through a ricer.
💡 Rice them hot and let them cool afterwards. Mashing cold potato with a fork gives lumps that tear the dumpling open in the water.
Fry the pork until the fat runs, add the onion and allspice, and cook until golden. Cool completely.
Mix the cooled riced potato with the flour, egg yolk and salt into a firm dough. Do not knead it much.
Take a handful, flatten it in your palm, put a spoon of filling in and close the dough completely round it. Roll smooth.
Lower them into a wide pot of gently simmering salted water. They sink, then rise — give them 20 minutes from the moment they float.
💡 Gently simmering, never boiling. A rolling boil knocks them together and they split, and then you are cooking soup.
Lift out with a slotted spoon, split each one open, and pour in melted butter. Lingonberry on the side.
