Zubereitung

  1. Whisk the egg yolks with the sugar and vanilla seeds for 3 minutes until pale and thick.

  2. Whisk in the lemon zest and juice.

  3. Add the yoghurt, then pour in the cold buttermilk in a thin stream while whisking.

    💡 Thin stream, constant whisking. Poured in all at once the yolks seize into little threads and it never comes smooth.

  4. Taste. It should be sharp first and sweet second — add lemon rather than sugar if it needs waking up.

  5. Chill at least 2 hours. It has to be genuinely cold, not merely cool.

  6. Serve in bowls with the biscuits scattered on top and strawberries alongside. Eat before the biscuits go soft.

💡 Tipps

  • Kammerjunker are small twice-baked biscuits made for exactly this. Any hard plain biscuit stands in, but soft ones dissolve.
  • Danish supermarkets sell it by the litre from May, and sales are a genuine indicator that summer has started.
  • Some households add a spoon of crème fraîche for body. It is a legitimate variation, not a shortcut.
