The cited article records the popular monastic origin story (an Italian monk, 610 AD, shaping 'pretiola' like praying arms), the Lenten role of a flour-and-water pretzel eaten when eggs and dairy were forbidden, and the Bavarian lye pretzel (Laugenbrezel) whose dark, shiny skin comes from a sodium-hydroxide bath before baking, salt being the common topping. The lye-safety guidance here is standard baking practice. Quantities and method are this book's own.

Dissolve the yeast and sugar in the lukewarm water. Add the flour and salt and knead into a firm, smooth, quite stiff dough — 8–10 minutes. It should be tighter than a sandwich-bread dough.
💡 A stiff dough is deliberate — it holds the pretzel's shape and gives the dense, chewy bite. Resist adding water.
Cover and let it rise until doubled, about 1 hour. Knock it back and divide into 8 pieces.
Roll each piece into a rope about 50 cm long, thick in the belly and tapering at the ends. Make a U, cross the two ends over each other twice to twist, then fold them down onto the belly and press to fix the classic pretzel shape.
💡 Chill the shaped pretzels uncovered for 30 minutes (or briefly in the freezer). A firm, slightly dried surface takes the lye evenly and holds its shape in the bath.
Prepare the bath. LYE ROUTE: wearing gloves and goggles, stir 40 g food-grade lye into 1 L cold water (always lye into water, never the reverse) in a stainless or glass bowl. BAKING-SODA ROUTE: boil 1 L water with 40 g baking soda for a few minutes. Dip each pretzel for 20–30 seconds, lift out, and set on a lined tray.
💡 The lye is what makes a pretzel a pretzel — the deep mahogany colour and the distinctive flavour come from it reacting with the crust in the oven. Baking soda is a gentler stand-in, not a flavour match.
Slash the thick belly of each pretzel with a sharp blade and scatter with coarse salt. Bake in a hot 220°C oven for 12–15 minutes until deep brown and glossy.
Cool on a rack just until you can handle them. Pretzels are at their best within a few hours — warm, with cold butter or Obatzda, or split and buttered.
