Zubereitung

  1. Grate the raw potatoes onto a clean cloth. Gather the cloth and wring it out hard over a bowl.

  2. Let the squeezed liquid sit 5 minutes. A white starch layer settles at the bottom — pour off the water and keep the starch.

    💡 That starch is not optional. It is the glue that stops boxty falling apart in the pan, and it comes free.

  3. Mix the grated potato, the reserved starch, the mash, flour, salt and bicarbonate together.

  4. Stir in the buttermilk to a thick, sticky batter that just holds a spoon shape.

  5. Heat the butter and bacon fat in a heavy pan over medium heat and drop in 4 spoonfuls, flattening each to 1 cm.

    💡 Medium heat and patient. Boxty is thick and raw potato needs time — high heat gives you a black crust and a raw centre.

  6. Cook 5 minutes a side until deep gold. Serve hot with butter, or under a fried egg and rashers.

💡 Tipps

  • The rhyme goes: boxty on the griddle, boxty in the pan — if you can't make boxty, you'll never get a man.
  • Leitrim, Cavan and Fermanagh are boxty country. Ask for it in Cork and you may get a blank look.
  • Boxty batter does not keep. The grated potato goes grey within an hour, so mix and cook in one go.
