Marinate the pork with the lemongrass, shallots, garlic, fish sauce, sugar, honey, pepper and 1 tablespoon of oil for at least 1 hour.
Scallion oil: heat the remaining 4 tablespoons of oil until shimmering and pour it over the spring onions with a pinch of salt. It should sizzle and turn bright green.
Steam the dried bánh hỏi sheets 5 minutes until soft and pliable (skip if fresh). Lay them out, brush every sheet with scallion oil, and cut into palm-sized squares.
💡 Oil every sheet while it is still warm. Cold bánh hỏi glues itself into a single slab that no one can separate at the table.
Grill the pork over hot charcoal or under a full grill 3 minutes a side until charred at the edges and glossy.
Arrange the noodle squares on a platter with the pork, peanuts and a little more scallion oil over. Herbs, pickles and nước chấm alongside. Everyone wraps their own.
