الخطوات

  1. Soak the wheat berries in cold water overnight, at least 8 hours.

  2. Drain, cover with fresh water and the salt, and simmer 1 hour 30 minutes until the grains have burst and are tender but still separate.

  3. Pour boiling water over the poppy seeds and leave 30 minutes, then drain and grind them to a grey paste.

    💡 Ungrounded poppy seed just sits there like grit. Grinding is what releases the milk and the flavour — a mortar or a spice grinder both work.

  4. Soak the raisins and apricots in warm water 20 minutes, then drain.

  5. Warm the honey with 100 ml of the wheat cooking water until it pours easily.

  6. Mix everything together in a large bowl and let it stand 2 hours before serving cool.
