Japanese wagashi / 和菓子The word dorayaki comes from dora, a gong the round cakes resemble; folklore even tells of the warrior Benkei's forgotten gong being used as a griddle. The familiar two-pancake sandwich form was created in 1914 by the Tokyo confectioner Usagiya in Ueno.
