Toss the chicken with the calamansi juice and 1 tsp salt and leave 20 minutes.
Brown the sausage in a dry pan, lift it out, then brown the chicken in its rendered fat. Set both aside.
💡 The sausage fat is the seasoning. Start with butter instead and the stew tastes like any other chicken pie.
Melt the butter in the pan, soften the onion and garlic, then stir in the flour and cook 2 minutes to a pale roux.
