Break the cold rice up with wet hands until there are no clumps left.
Fry half the garlic in the oil over medium-low heat until pale gold, then lift it out onto kitchen paper.
💡 Pull it out one shade before you think it is ready. It keeps cooking on the paper, and garlic goes from gold to bitter in about fifteen seconds.
Turn the heat to high, add the rest of the garlic to the same oil and stir for 20 seconds.
Tip in the rice and fry, pressing it flat and turning it, for 5 minutes until it smells toasted and the grains separate.
Season with salt and pepper, then scatter the reserved crisp garlic and spring onion over the top.
