Japanese home-style / 日本の家庭料理 — Inarizushi is vinegared rice packed into sweetened, dashi-simmered pouches of fried tofu. It is named after Inari, the Shinto deity associated with fried tofu, and is a longtime staple of home cooking and packed lunches.

Roll a chopstick over each aburaage to loosen it, then cut in half and gently open each piece into a pocket.
Pour boiling water over the pouches to draw out excess oil, then squeeze them gently dry.
Simmer the pouches in the dashi with soy, sugar and mirin until they are soft and have soaked up most of the liquid.
Let the pouches cool in their liquid so they stay juicy and fully seasoned.
Fold the sesame through the vinegared rice and shape it into small ovals.
Squeeze each pouch lightly, tuck in a rice oval, and fold the edges over to close.
