Non-alcoholic adaptation of a Brazilian cocktail — The caipirinha is Brazil's national cocktail — cachaça (sugarcane spirit), lime and sugar, muddled over ice — and is legally defined in Brazil. This is a virgin adaptation that keeps the muddled lime-and-sugar base and replaces the cachaça with sparkling water; the classic drink is alcoholic.

Trim the pale bitter tip off both ends of the lime, then cut it into 6–8 wedges. Drop them into a sturdy short glass.
Add the sugar straight onto the lime.
Press and twist with a muddler or the end of a wooden spoon for 20–30 seconds, until the sugar dissolves and the limes release their juice.
💡 Muddle firmly but don't pulverise the peel — grinding the white pith too hard turns the drink bitter. A gentle press-and-twist is enough.
Fill the glass with crushed ice right to the top.
Pour over the sparkling water, stir gently from the bottom to lift the lime and sugar, and serve at once with a straw.
