作り方

  1. Pat the fillets completely dry with paper towel, especially the skin, and season both sides with salt and pepper.

    💡 Dry skin is the whole secret to crisp skin. Any surface moisture steams instead of searing, and you get pale, rubbery skin that sticks to the pan.

  2. Heat the olive oil in a non-stick or well-seasoned pan over medium-high until it shimmers.

  3. Lay the fillets in skin-side down and press each gently with a spatula for the first 20 seconds so the skin stays flat against the pan.

    💡 Fish curls the instant it hits the heat as the skin tightens. Pressing for a few seconds keeps the whole skin in contact so it crisps evenly instead of only at the edges.

  4. Cook skin-side down for 5–6 minutes without moving it. You'll see the flesh turn opaque from the bottom up, most of the way through.

  5. Flip the fillets and cook the flesh side just 1–2 minutes more, until the fish flakes at a gentle push. Lift onto warm plates, skin up.

  6. Wipe the pan, drop in the butter and melt over medium heat until it foams and smells nutty.

  7. Add the capers and lemon juice — it will sizzle and foam — swirl for 30 seconds, then stir in the parsley.

  8. Spoon the lemon-caper butter over the crisp-skinned fish and serve with lemon wedges.

💡 コツ

  • Beginner's mistake: moving or flipping the fish too soon. It sticks and tears because the crust hasn't formed yet. Leave it be — a properly seared fillet releases from the pan on its own.
  • Cook it about 80% skin-side down and only briefly on the flesh — that keeps the inside just-cooked and moist while the skin gets fully crisp.
  • Barramundi hard to find? Any firm white fish with skin — snapper, sea bass, even salmon — works with exactly this method.
