Passaggi

  1. Make the tsuyu ahead by simmering dashi, soy and mirin, then chilling it until cold.

  2. Boil the soba in plenty of unsalted water, stirring gently, just until tender.

  3. Drain and rinse the noodles under cold running water, rubbing off the starch until they feel cool and firm.

  4. Shake the noodles dry and lay them on a bamboo zaru or a flat basket.

  5. Scatter shredded nori over the top.

  6. Serve with the cold tsuyu, scallion, wasabi and grated daikon to stir in and dip.

💡 Consigli

  • Rinsing well in cold water is what gives zaru soba its clean, springy bite.
  • Add wasabi and scallion to the dipping cup, not the noodles, so each mouthful is fresh.
  • Finish by drinking the noodle water (sobayu) mixed into the leftover tsuyu.
