Paik Jong-won (요리비책) — Published by Paik Jong-won on his own YouTube channel as '불맛 달걀볶음밥' (smoky egg fried rice), where he says this is the fried rice you have eaten at Chinese street stalls. His method gets that smokiness without a restaurant wok burner: the soy sauce is poured onto a bare, cleared patch of the hot pan and allowed to scorch, and the rice is only added once the heat is switched off.

Slice the green onion into thin rounds. Crack the eggs into a bowl and beat them lightly. Have the rice measured out and everything within arm's reach — this cooks fast.
Pour the cooking oil into a pan, add the green onion, and fry over medium heat.
💡 4 tbsp looks like a lot for one bowl of rice. It is deliberate — you are making scallion oil, which is the backbone of the dish, not just greasing the pan.
Fry 2–3 minutes, until the scallion rounds turn golden at the edges and the oil is loudly fragrant, then push them all to one side of the pan.
💡 Golden, not brown. Scallion that goes dark turns bitter and there is nowhere for that bitterness to hide in a four-ingredient dish.
Pour the beaten egg into the empty side of the pan and scramble it there, keeping it in soft, large curds.
Push the egg and scallion aside to clear a bare patch of pan, and pour the soy sauce directly onto that hot bare metal. Let it bubble and scorch for a few seconds.
💡 This is where the 불맛 — the smoky note in the title — actually comes from. Soy sauce needs to touch bare, screaming-hot metal to caramelise like this. Stirred into the eggs it would just taste salty.
Mix the scrambled egg and fried scallion into the scorched soy until everything is evenly coated and lightly browned.
Now TURN OFF THE HEAT. Add the seasoned salt and the rice, and break the rice apart with a ladle off the flame until every grain is separate and coated.
💡 The same discipline as his kimchi fried rice: rice meets the pan off the heat. Grains that hit a blazing pan clump instantly and no amount of stirring will fix it afterwards.
When the rice is fully broken up and evenly mixed, return the pan to high heat.
Stir-fry 2–3 minutes over high heat, tossing constantly, until the grains bounce loose in the pan and start to crackle and pop against the metal.
Add the MSG here if you want it, toss once more, and taste for salt.
Serve immediately, straight from the pan into the bowl, while the edges of the rice are still crisp.
