  1. Fry the onion in the butter 6 minutes, add the mushrooms and cook hard 10 minutes until every drop of liquid has gone. Cool completely.

    💡 Cook the mushrooms until the pan is dry, then cool everything. Warm or wet fillings steam the pastry from the inside and it will never rise.

  2. Season the salmon with salt, pepper, lemon zest and juice. Mix the rice with the eggs, half the dill and salt.

  3. Roll two-thirds of the pastry into a rectangle 25 × 35 cm. Lay two pancakes down the middle in a strip.

  4. Build in bands on the pancakes: half the rice, then the mushrooms, then the salmon in one piece, then the rest of the rice and the dill. Lay the other two pancakes over the top.

  5. Roll the remaining pastry, lay it over and seal the edges under. Cut two holes in the top, decorate with pastry scraps and glaze with egg. Chill 30 minutes.

  6. Bake at 200 °C for 20 minutes, then 180 °C for 30 minutes until deep brown. Rest 20 minutes before cutting thick slices.

  • The grand version stacks several fillings between white fish and rice layers and once included vesiga, sturgeon spinal marrow, which almost nobody has used for a century.
  • Simpler cabbage or potato fillings make a vegetarian kulebyaka, which is what most households actually bake.
