The distinctive moves are hers: one braising sauce mixed once and then split into four jobs (a third to marinate the meat, 2 tbsp into the tteok stuffing, more for the garnish, the rest to finish), and rice cake that is cross-cut, stuffed with mince and fried cut-side down before it ever meets the braise. One gap we flag rather than fill: her list names the minced beef but never states its weight.

Soak the shank in cold water until the water no longer turns red, then put it in a pot in one piece with 10 cups of water, the whole garlic, green onion roots and peppercorns.
💡 Whole, not cubed. Cubing now would let the shank leak its juice into the stock for 90 minutes; she cuts it only after it is cooked, which is why her pieces stay succulent.
Simmer for 1 hour to 1 hour 30 minutes — her own figure — until a skewer slides through the thickest part with almost no resistance. Skim the foam in the first ten minutes.
💡 Shank is all connective tissue. Under-simmer it and it is rubber; the time is doing chemistry, not just heating. There is no shortcut that leaves the texture intact.
Boil the radish and carrot in the shank stock until a fork goes in easily, then lift everything out. Cut the shank into bite-size cubes and cut the radish and carrot to match. Strain the stock through the cheesecloth and keep it.
💡 Her text says 'the carrot and radish boiled in the shank stock' without saying when they went in — so this is our reading of it. Add them for the last 15–20 minutes of the shank's simmer; any longer and they collapse.
Mix the braising sauce: 6 tbsp soy sauce, 4 tbsp grated pear, 2 tbsp sugar, 3 tbsp minced green onion, 1½ tbsp minced garlic, 2 tbsp sesame seeds, 1 tbsp sesame oil and ⅓ tbsp pepper.
Take ONE THIRD of that sauce and toss it through the cubed shank, radish and carrot. Leave them to sit. Keep the other two thirds — it has three more jobs.
💡 Dividing the sauce is the spine of this recipe. Beginners dump it all on the meat here and then have nothing for the stuffing, the garnish braise or the final seasoning — and the dish comes out both flat and over-salted in the same bite.
Cut the garae-tteok into 4 cm lengths, score a deep cross (十) into one end of each, and blanch them briefly in boiling water until they soften and float.
Mix the minced beef with 2 tbsp of the remaining sauce, then press it into the cross-cuts of the blanched tteok so the four petals open around the filling.
💡 Stuff them while the tteok is still warm and pliable. Once it cools it stiffens and the cross snaps shut — or the whole piece splits.
Heat 2 tbsp of oil in a pan over medium and lay the tteok in cut-side DOWN so the filling sears first. Fry the leftover minced beef in the same pan. Give it 2–3 minutes, until the meat face is browned and the tteok edges blister.
💡 Cut-side down seals the filling in. Fry it the other way up and the mince falls out into the braise later, and you end up with hollow tteok in a gritty sauce.
Put the marinated shank, radish and carrot into a pot and pour in just enough of the reserved stock to cover them.
Braise over MEDIUM heat for at least 30 minutes — her figure — uncovered, so the sauce thickens as it goes.
💡 'At least 30 minutes' is a floor, not a target. The shank is already tender; this stretch is about the sauce working its way in. Rushing it on high heat glazes the outside and leaves the middle bland.
Halve the peeled chestnuts and the rehydrated shiitake, and split the jujubes to remove the stones.
Once the pot is bubbling steadily, add the chestnuts, shiitake and jujubes. When the liquid has reduced by about half, slide in the fried stuffed tteok and keep simmering.
💡 Tteok goes in last for a reason: it drinks liquid and turns to paste if it sits in the pot too long. You want it warmed through and glazed, still with a chew.
Fry the separated egg into thin yellow and white sheets, and cut them and the red chili into diamonds. Cut the minari into 3 cm lengths.
Scatter in the minari and the chili and let it come back to a boil once — no more. Taste, and top up with the last of the sauce only if it needs it.
💡 One boil, then off. Minari's whole contribution is a fresh green snap against a heavy braise; simmer it and it goes khaki and limp.
Spoon it into a wide bowl and finish with the egg diamonds, the ginkgo nuts and the pine nuts on top.
