Brown the chicken in the oil on all sides over medium-high heat, then lift it out.
Fry the potatoes and carrots in the same pan for 4 minutes until their edges colour, and set them aside too.
💡 Frying the potato first seals it. Dropped straight into the sauce it disintegrates and thickens the stew into paste.
Soften the onion and garlic in the same pan, 3 minutes.
Add the tomato sauce, stock, fish sauce, bay and sugar. Return the chicken and simmer, covered, 20 minutes.
Add the potatoes and carrots and simmer 12 minutes more until a knife slides into the potato.
Stir in the peppers, cook 3 minutes, season with pepper and serve with rice.
💡 Peppers last and briefly. Simmered from the start they go grey and slack, and their job here is colour and a little crunch.
