Put the potatoes in a large pot with the salt and just enough water to cover. Bring to the boil and cook 12 minutes.
Pile the shredded kale on top of the potatoes, put the lid on and let it steam for 12 minutes. Do not stir it in yet.
💡 Steaming the kale on top rather than boiling it in keeps its colour and stops the whole pot turning grey-green.
Lay the sausages on top of the kale for the last 10 minutes to heat through. Lift them out and keep them warm.
Fry the bacon in a dry pan until crisp. Keep the fat — it goes into the mash.
Drain the pot, keeping 100 ml of the cooking water. Add the butter, warm milk, pepper and bacon fat and mash hard until the kale is worked all the way through.
💡 Mash by hand, never in a blender. Whipped potato turns to glue in about four seconds.
Serve in mounds with a dent pressed in the top, the sausage sliced over it, bacon scattered and mustard on the side.
