Plecing Kangkung

Blanched water spinach served cold under a spoonful of plecing — a raw sambal of red chilli, shallot, garlic, candlenut, shrimp paste and kaffir lime. The Lombok side dish for ayam taliwang, and the Bali one for betutu; on its own, the fastest vegetable dish in the archipelago.

Bali & Lombok · water spinach under raw sambalAn ownerless regional dish, so no cook is credited. The cited article confirms plecing kangkung as a Bali and Lombok dish of blanched water spinach served cold with a raw sambal of red chilli, shallot, garlic, bird's-eye chilli, candlenut, kaffir lime, shrimp paste, salt and sugar, often with bean sprouts, string beans, fried peanuts and urap. The blanching time, ice bath and quantities are this book's own.

Langkah

  1. Bring a large pot of salted water to a boil. Blanch the kangkung 45 seconds — no longer — then lift into iced water, drain, and squeeze gently.

💡 Forty-five seconds, then cold. Kangkung goes from bright and crunchy to olive and slimy in the minute after that, and it cannot come back.

  2. Pound or blend both chillies, shallots, garlic, candlenuts, tomato and terasi into a coarse, wet sambal. Season with lime, salt and sugar.

💡 Raw. Plecing sambal is not cooked, which is why it tastes so sharp and green next to the mellow blanched leaves.

  3. Arrange the kangkung on a plate with the bean sprouts. Spoon the sambal over the top and scatter with fried peanuts.

  4. Serve at room temperature or chilled, as a side to grilled chicken or fish.

💡 Tips

  • The Lombok version pours the sambal over; the Bali version tosses it through with a spoon of urap — spiced grated coconut. Add 3 tablespoons of urap for that.
  • Morning glory, ong choy and kangkong are the same plant. Any Asian grocer has it, and the thinner-stemmed kind is better here.
