Mutabbaq

Dough stretched until it is translucent, folded around spiced minced lamb, leek and egg into a flat parcel and fried on a griddle — the Hejazi street snack that comes out of Ramadan evenings.

Hejazi · Ramadan street foodAn ownerless traditional dish, so no cook is credited. `Mutabbaq` redirects to `Murtabak`, which covers the Arabian and Southeast Asian versions together and confirms the stuffed, folded, pan-fried bread and the Arabian peninsula's place in its spread. It is not a Saudi-only article and that is said rather than glossed over. Quantities, the oil-rest and the leek ratio are this book's own.

Langkah

  1. Mix the flour, dough salt and warm water into a soft dough and knead 10 minutes until very smooth.

  2. Divide into 4, roll each into a ball and sit them in a dish of oil, covered, for at least 1 hour.

💡 The oil bath is what makes the dough stretchable. An hour is the minimum; three hours is better and it will not spoil.

  3. Fry the mince with the garlic, chilli, baharat, pepper and salt until dry and browned, 10 minutes. Cool it, then mix in the raw leek and egg.

  4. On a well-oiled surface, press one dough ball out with your palms and stretch it from the centre outwards until it is nearly transparent.

💡 Stretch, do not roll. Push from the middle with the flats of your hands and let gravity help — a rolling pin tears oiled dough every time.

  5. Spread a quarter of the filling in a square in the middle and fold the four sides over it into a flat parcel.

  6. Fry on an oiled griddle over medium heat, 4 minutes a side, pressing it flat, until deep gold and crisp. Cut into squares.

💡 Tips

  • Mutabbaq means folded in Arabic, and that is the whole name — everything else about it is the filling.
  • A sweet version filled with banana and condensed milk is sold from the same carts, and is folded exactly the same way.
  • The first one will tear. Patch it, fry it anyway, and the next three will be better.
