Mix the mince with the onion, pepper, garlic, parsley, spices and a good teaspoon of salt. Work it only until combined.
Open each bread along one edge into a pocket without tearing it apart.
Push the filling in and flatten it to an even layer right out to the edges — about 1.5 cm thick.
💡 An uneven layer is why home hawawshi comes out half raw and half scorched. Press it flat with your palm through the bread.
Brush both sides with melted butter and set on a hot oven tray.
Bake at 220 °C for 20–25 minutes, turning once, until the bread is deep brown and crisp and the juices have soaked in.
Cut into wedges and eat straight away, with pickles and tahini or a squeeze of lemon.
