Crumbled Tofu Stir-fry · Haruhankki

A block of tofu crushed straight into the pan and fried until the water has gone and the crumbs turn dry and fluffy, seasoned with one single spoon of oyster sauce. His own warning: it disappears after a few spoonfuls.

Recipe published by 하루한끼The creator publishes the recipe — four ingredients and five numbered steps — in this video's description, and the heat levels in steps 1 and 3 (중약불, 중불) are his own. He gives no serving count and no weight for the tofu: servings: 2 is OUR reading of one standard block of tofu plus half an onion. The pan-crushing, the "fry until the tofu's water has gone" instruction and the single spoon of oyster sauce are all exactly as he wrote them; his one-line note above the recipe warns that it disappears after a few spoonfuls.

Langkah

  1. Chop the onion and slice the green onion.

  2. Drain the tofu and pat it dry with kitchen paper.

💡 Not in his method, but it saves you minutes. Every drop you take off now is a drop you do not have to fry off later — and this dish is entirely about driving water out of tofu.

  3. Set a pan over medium-low heat with a little oil and add the green onion and onion.

  4. Fry them until the good smell is just about to arrive — his phrase is 날동 말동, that moment when it is barely there. The onion should be softening but not yet browning.

💡 He is telling you to move on early, before the aromatics are fully done. They will keep cooking for the next ten minutes with the tofu — take them to golden now and they will be burnt by the end.

  5. Put the whole block of tofu into the pan and crush it with your spatula, right there in the pan, into rough crumbs.

  6. Turn the heat up to medium and start frying.

  7. Keep going until the water has gone. You will see it: the pan first floods with cloudy liquid, then the liquid boils off, and the crumbs stop glistening.

💡 This takes longer than you expect — several minutes of it looking like nothing is happening. Stopping while the pan is still wet is the single reason a beginner's 두부볶음 tastes of wet, bland tofu.

  8. Keep stirring and scraping. The crumbs go from wet and heavy to dry, light and separate — 고슬고슬, the same word Korean uses for perfectly cooked, fluffy rice.

💡 The tofu also stops sticking to the pan at this point. That release is your signal — dry tofu does not stick, wet tofu does.

  9. When it has gone properly fluffy, add the 1 spoon of oyster sauce.

  10. Fry for 1 minute more so the sauce coats every crumb and lightly toasts, then turn the heat off.

💡 One spoon looks like far too little for a whole block. It is not — the tofu is dry now and has nothing to dilute it, so it takes the seasoning straight. Taste before you reach for a second spoon.

  11. Off the heat, add the sesame oil and black pepper and turn everything through.

💡 Sesame oil always goes on after the heat is off. Fry it and you cook away the exact aroma you added it for.

  12. Eat it hot, spooned over rice or straight from the pan. His own note on this recipe is a warning that it vanishes after a few spoonfuls.

💡 Tips

  • Beginner's mistake: giving up on the frying too early because the pan looks like a wet mess. That flooded stage is normal and it is the whole job — the pan has to come back to dry before the tofu can taste of anything. Push through it.
  • Substitution: no oyster sauce? Soy sauce plus a pinch of sugar gets close, and makes the dish vegan as a bonus. Doenjang thinned with a spoon of water is the more Korean answer and tastes deeper.
  • Firm tofu only. Sundubu or silken tofu has nothing to crumble into — it turns to paste the moment you press it and then never dries out.
  • This is a blank canvas by design — his list literally ends with "whatever else you like". Kimchi, minced pork, mushrooms, corn or a spoon of gochujang all take it somewhere else without changing the technique.
