Langkah

  1. Drain the soaked maize and beans, cover generously with fresh water and boil hard for 10 minutes, then simmer, half-covered, for 60–90 minutes until both are tender. Top up with hot water if the pot runs dry.

    💡 The maize takes longer than the beans. Test a kernel — it should be chewy but not hard in the middle.

  2. Drain, keeping a cup of the cooking water. At this point it is plain githeri and is eaten exactly like this in many homes — season it with salt and stop here if you like.

  3. For the fried version, heat the oil in a wide pan and cook the onion until golden, 5 minutes. Add the garlic and cumin and stir for 30 seconds.

  4. Add the tomatoes (and potatoes, if using) and cook until they break down, 5–8 minutes. Tip in the drained maize and beans with a splash of the reserved water and the salt.

  5. Mash a spoonful of the beans against the side of the pan to thicken everything, then cook 10 minutes more on low so it comes together. Serve hot, on its own or with chapati.

  • Githeri is Kenya's school-and-army food and a Kikuyu home staple — cheap, complete protein, and it reheats better than it cooks fresh.
  • Two soaks and a long boil are unavoidable with dried maize. Start it the night before and it becomes an easy weekday pot.
  • Mash the finished githeri with potatoes and greens and you have mukimo, the other Kikuyu classic in this batch.
