Soften the onion, garlic and ginger in a dry heavy pot with 3 tbsp of the coconut cream over medium heat, 4 minutes.
💡 Coconut cream instead of oil. It splits under heat and fries in its own fat, which is what gives ginataan its scent.
Pour in the coconut milk and bring it to a bare simmer — never a rolling boil.
💡 Hard boiling splits coconut milk into oil and grainy curds. Small bubbles at the edge, and stir it now and then.
Add the squash and simmer, uncovered, 15 minutes until a knife meets almost no resistance.
Press about a quarter of the squash against the side of the pot to break it down and thicken the sauce.
Add the beans and chillies, cook 5 minutes, then the prawns and the remaining coconut cream and cook 3 minutes more.
Season with fish sauce and pepper and serve with rice.
