Mix the pork with the beaten eggs, breadcrumbs, carrot, onion, bell pepper, raisins, relish, soy, salt and pepper. Knead by hand for 2 minutes until it holds together.
Lay a sheet of foil on the counter. Spread half the meat into a rectangle about 25 × 18 cm and 1.5 cm thick.
Down the centre line lay two boiled eggs end to end and a strip of ham on each side of them.
Using the foil, roll the meat over the filling into a tight log, then wrap the foil around it and twist both ends hard like a sweet wrapper. Repeat for the second roll.
💡 Tight. Any air pocket becomes a hole in the slice, and a loose roll splits when it steams.
Steam the rolls 1 hour, turning once, over steadily boiling water.
Cool completely in the foil, then chill at least 2 hours before unwrapping and slicing 1 cm thick. Serve with banana ketchup.
💡 Slice cold. Warm embutido crumbles; chilled, it cuts into clean rounds with the egg and ham showing.
