  1. Boil the potatoes in salted water for 20 minutes until a knife slides in without resistance.

  2. Meanwhile, boil the cabbage in a separate pan for 4 minutes, then drain it hard and squeeze out the water.

  3. Warm the milk with the spring onions for 3 minutes so they soften and flavour it.

  4. Drain the potatoes and let them steam dry in the empty pot for 2 minutes before mashing.

  5. Mash with half the butter and the onion milk until smooth, then fold in the cabbage — fold, do not beat.

  6. Pile it in a warm dish, press a hollow in the top and pour in the rest of the butter, melted.

  • At Halloween a ring is hidden in the bowl — whoever finds it is said to be married within the year.
  • Kale makes a darker, stronger colcannon and is the older version; cabbage is milder and more common now.
  • The butter well is not decoration. You dip each forkful into it, so the mash itself is deliberately underseasoned with fat.
