  1. Salt the eggplant cubes and let them drain for 15 minutes to draw out bitterness, then pat dry.

  2. Brown the eggplant, zucchini and peppers separately in olive oil so each keeps its own flavor, and set aside.

  3. Soften the onion and garlic, then add the tomatoes and herbs and cook into a loose sauce.

  4. Return all the vegetables to the pot and fold them gently into the tomato base.

  5. Simmer uncovered on low heat for 25–30 minutes until everything is tender and melded.

  6. Finish with a drizzle of olive oil and fresh basil; serve warm or at room temperature.
