Étapes

  1. Whip the room-temperature egg whites to soft peaks.

  2. Add the sugar a spoonful at a time, beating until the meringue is stiff, glossy and no longer gritty when rubbed.

  3. Fold in the cornstarch and vinegar, which give the soft marshmallow center.

  4. Spoon into a round on a lined tray, building up the sides slightly to hold the topping.

  5. Bake low at 120°C (250°F) for about 90 minutes, then turn off the oven and let it cool inside completely.

  6. Just before serving, pile on whipped cream and fresh fruit.

💡 Astuces

  • Add the sugar slowly and beat until fully dissolved, or the meringue weeps.
  • Cooling it in the switched-off oven prevents cracking and collapse.
  • Top it only at the last minute so the shell stays crisp.
