  1. Simmer the beef in the water with the bay and peppercorns for 1 hour 30 minutes, skimming the foam off in the first ten minutes.

  2. Lift the meat out, strip it off the bone and cut it into chunks. Strain the broth back into the pot.

  3. Fry the onion and carrot in the oil for 10 minutes, add the tomato and cook 5 minutes more.

    💡 This fried base is called a zazharka and it goes into almost every Russian soup. Fried, not boiled — the colour comes from the pan, not the pot.

  4. Add the potato to the broth and cook 12 minutes, then the cabbage and the zazharka and cook 20 minutes more.

  5. Return the meat, add the salt and garlic and simmer 10 minutes. Taste — cabbage soup always needs more salt than you expect.

  6. Take it off the heat, stir in the herbs and let it stand 20 minutes before serving with a spoon of smetana in each bowl.

💡 Mga tip

  • Shchi is over a thousand years old and there is a Russian saying that it and kasha are all the food a person needs.
  • Day-old shchi is called sutochnye shchi and is considered better. Some households used to freeze it deliberately and thaw it in pieces.
  • Do not brown the beef first. Shchi is a boiled, pale soup and searing gives it a different, darker character.
