Whisk the egg yolks with the sugar and vanilla seeds for 3 minutes until pale and thick.
Whisk in the lemon zest and juice.
Add the yoghurt, then pour in the cold buttermilk in a thin stream while whisking.
💡 Thin stream, constant whisking. Poured in all at once the yolks seize into little threads and it never comes smooth.
Taste. It should be sharp first and sweet second — add lemon rather than sugar if it needs waking up.
Chill at least 2 hours. It has to be genuinely cold, not merely cool.
Serve in bowls with the biscuits scattered on top and strawberries alongside. Eat before the biscuits go soft.
