Warm the plates and heat the oven to 100°C — everything that comes off the pan waits in there.
💡 The whole difficulty of a fry is timing, and a warm oven removes it entirely. Cook in order, park each item, plate at the end.
Start the sausages in a cold pan over low-medium heat. They take 15 minutes and need turning every few minutes.
Add the rashers after 8 minutes, 3 minutes a side, then move both to the oven.
Fry the black and white pudding in the fat 2 minutes a side — they only need heating through and they break if you fuss.
Fry the mushrooms and tomato in the same pan, then the farls, then the eggs last in the butter.
Plate everything at once with the egg on top and the farl underneath to catch the yolk. Tea, not coffee.
