  1. Trim the pale bitter tip off both ends of the lime, then cut it into 6–8 wedges. Drop them into a sturdy short glass.

  2. Add the sugar straight onto the lime.

  3. Press and twist with a muddler or the end of a wooden spoon for 20–30 seconds, until the sugar dissolves and the limes release their juice.

  4. Fill the glass with crushed ice right to the top.
