Whisk both flours with the water, sugar, salt and eggs into a smooth pouring batter and rest it 30 minutes.
Heat a heavy 24 cm pan over medium heat and brush it with oil.
Pour in a ladle, swirl to a 5 mm thickness, and cook uncovered until the surface loses its shine and the edges lift — about 4 minutes.
