Pasos

  1. Cook the potato and onion slices gently in plenty of olive oil over low heat until soft but not browned, then drain.

  2. Beat the eggs with salt and fold the warm potatoes and onion through them; let it sit a few minutes.

  3. Heat a little oil in a nonstick pan and pour in the mixture, cooking over medium-low until the base sets.

  4. Slide it onto a plate, invert the pan over it, and flip the tortilla back in to cook the other side.

  5. Cook until just set with a slightly creamy center.

  6. Rest a few minutes, then cut into wedges.
