Wash the tripe under cold running water, rub it with the juice of the limes and leave it 30 minutes, then rinse well.
💡 The lime soak is what removes the smell. Skip it and the whole pot will taste of what you were trying to get rid of.
Cut the tripe into 1 cm squares. This takes twenty minutes and there is no way round it.
Simmer the tripe in the water with half the onion and the garlic for 2 hours, until you can bite through a piece easily.
Meanwhile fry the rest of the onion, the spring onion, tomato and cumin in the oil for 15 minutes into a hogao. Add it to the pot with the pork.
Simmer another 45 minutes, then add the potato and carrot and cook 25 minutes.
Add the peas and salt for the last 10 minutes. Stir in the coriander off the heat and serve with rice, avocado and lime.
